Potato Latkes
Ingredients:
Shortening (for frying)
2 lbs potatoes
1 grated onion
1 beaten egg
2 tbsp flour
1 1/2 tbsp baking powder
1 lemon
Salt and pepper to taste
Directions:
Preheat the oven to 250 degrees. Prepare a large bowl of ice water and
squeeze the juice of the lemon into it. Peel and grate the potatoes
into the bowl and allow to stand for around one hour or so. Next,
drain the potatoes and squeeze out all moisture using cheesecloth.
Place the potatoes in a food processor and blend until smooth. Then,
add the egg, onion, flour, baking powder, salt and pepper. Stir until
blended.
In a large frying pan, heat a generous amount of shortening. Scoop the
potato mixture in large spoonfuls and drop gently into the heated pan.
Fry for about one minute on each side, then remove from heat and drain
on absorbent paper towels.
